Ingredients
1 – 1.2kg Lamb Pieces
3 Medium Potatoes
250ml / 1 cup Buttermilk or Plain Yoghurt
1 Cup Grated Tomato
1 Small Onion
2 Cups uncooked Rice
Tumeric
Whole Spices
Breyani Masala
Method
Breyani is a royal dish. It requires patience for which you will be greatly rewarded. The dish is prepared in many parts before it all comes together.
Step one:
Place the lamb pieces in a bowl. Mix all the breyani masala with the buttermilk / plain yoghurt. Set aside in the fridge. (Tip: Try to leave it overnight if possible)
Step 2:
Rinse your rice and put it to boil. Add all the whole spices, salt and 1 teaspoon of turmeric. Cook the rice HALF WAY THROUGH. Then strain and set aside.
Step 3:
Rinse the lentils and put it to boil. Add salt to taste and boil until soft. Strain and set aside.
Step 4:
Peel the potatoes and cut into quarters. Toss with fine salt and the remaining turmeric. Once evenly coated, fry in shallow oil. This will slightly crisp the outside. Do not fry until well done. Set aside.
Step 5:
Now that all the ingredients have been prepared, it is time to assemble the breyani. Choose a large pot that will be able to hold all the ingredients. The pot should be able to go into the oven. If you do not have a large pot that can go into the oven, Use a large roasting pan.
Set the oven on 160˚C.
Place a little oil in a pot to fry your onions. When the onions start to brown, place the meat and all the marinade into the pot. Use medium heat. Once the meat starts to cook, add the tomato and the lentils. Don’t forget to add salt. Mix well.
Once it starts boiling again, add the rice on top (with its spices). DO NOT MIX. Switch the stove off immediately. Place the fried potatoes over the rice. Optional: add a little butter on top.
Pour ½ cup of hot water around the outer edge of the pot. Cover with a lid or foil and place in the oven. Check the breyani after 1 hour. It should be done when all the water has evaporated. If not, check every 10 minutes thereafter. Remove from oven and leave to rest for ½ hour before serving.
