Sri Lankan Chicken

Ingredients
5 chicken thighs
1 teaspoon ginger and garlic
4 teaspoons Sri Lankan Curry Spice
1 teaspoon Kashmiri Chilli Powder
Curry Leaves
1 tablespoon ghee (clarified butter)
½ onion finely chopped
2 tomatoes diced
Method

Melt the ghee on medium heat, then
add the dry spices, curry leaves, ginger & garlic and chicken thighs. Don’t forget salt to taste. Fry the thighs for 4 minutes on each side and remove.

Add in the onions and fry until slightly brown then add in the tomatoes.

After 2 minutes add the chicken and simmer until the tomatoes are done
Best enjoyed on a bed of fluffy couscous
